Muffin in A Minute

If you’re looking for a fast, healthy, morning treat that everyone in the family will enjoy, try my version of a Muffin-in-a-Minute. It’s delicious, nutritious, and surprisingly easy to make. Enjoy!

Ingredients:Dr. Jen's muffin in a minute

  • 1/4 cup of almond flour
  • 1 tbsp of ground flaxseed
  • 1/2 tsp of coconut oil
  • 1 egg
  • 1/2 tsp of aluminum free baking powder
  • 1 tbsp of mashed banana
  • 1 tsp of cinnamon
  • Pinch of sea salt
  • 5-7 drops of stevia

Directions: Melt coconut oil for 30 seconds in the microwave, slowly add in egg (being careful to add gradually, so as not to scramble the egg.) Mix in remaining ingredients until combined. Microwave for 1 minute, then let stand to cool. Enjoy!
